a cold weathered friend

Jen over at The Cottage Nest (http://www.thecottagenest.blogspot.com) is asking for a favorite cold weather recipe.  Well mine definitely has to be a Taste of Home recipe for baked potato soup.  I have relied on this wonderful stand-by for years.

2/3 cup butter

2/3 cup all-purpose flour

7 cups milk

4 large baking potatoes, baked, cooled, peeled and cubed

4 green onions sliced

12 bacon strips, cooked and crumbled

1-1/4 cups shredded cheddar cheese

1 cup (8 ounces) sour cream

3/4 tsp. salt

1/2 tsp. pepper

In a large soup kettle, melt the butter.  Stir in flour; heat and stir until smooth.  Gradually add milk, stirring constantly until thickened.  Add potatoes and onions.  Bring to a boil, stirring constantly.  Reduce heat; simmer for 10 minutes.  Add remaining ingredients; stir until cheese is melted.  Serve immediately.  Yields: 8-10 servings.

I gave you the recipe as it reads, however when I make it, I double the potatoes because we LOVE  our potatoes :)  I also find that the soup is best if it simmers for longer.  In fact, it is even better the second day as all of the flavors have melded together better.

This is one of the only soups that I can get my husband to eat because of how thick it is.  It is definitely a hearty, warm you up kind of treat.

mmmmmmmm it looks and sounds good!!! Hey, this is going to sound crazy, but last night when I couldn't fall asleep right away, I was thinking about your incredible talent and what I would do with it if I sew could ( :-) ) anyway. thinking fresh for spring....... what if you took fabric that is bold like this in fun spring colors and embroidered the french knots on the color in the same color embroidery thread? it would make it chunky and fresh!
